Collins

Collins - along with punch - was one of the most popular refreshers in the 19th century.

The Tom Collins is a cocktail. It is essentially a Gin Fizz, using “Old Tom Gin” (a sweetened version of, and precursor to, London Dry Gin) and served in a Collins glass over ice. Commercial sweet and sour mix is commonly used as a replacement for the sugar and lemon juice.

Ice cubes
2 parts gin
½ part sugar syrup
4 parts soda water
1 part lemon juice

Fill the collins glass with ice cubes. Pour the lime juice, sugar syrup and gin in it. Stir together and fill up with soda water. Add a straw and decorate with lime wedge.
